    I subbed cannellini beans for the chickpeas, used Trader Joe’s frozen roasted corn instead of the canned corn and added some chopped fresh jalapeño and about a cup and a half veggie broth. I cooked it on high in the crockpot for a few hours until the vegetables were softened. Topped each bowl with chopped green onions, cilantro, avocado and cheese. It is delicious.
