    This is similar to David Lebovitz’s Chez Panisse recipe. The trick is to get the almond paste finely ground. Once the paste is in pieces adding the sugar slowly does the trick. Although it does fly out of the mixer. Will try the food processor next time. Baked 55 min in a 9” springform. The cake freezes beautifully. Served it with whipped cream & berries. It totally disappeared.
