Can substitute oranges or limes for sour orange juice; chorizo sausages or smoked sausages for ground pork, lard, sausage casings, and vinegar, and accompanying seasoning paste; the book's "Seasoning paste for vinegar-based dishes (Recado de escabeche)" for the book's "Black seasoning paste (Chilmole o recede de rellena negro);" and chiles de país, guajillo chiles, or New Mexico red chiles for ancho chiles.
