    These were great, much more than the sum of their parts. Used leftover Restorative Chicken Risotto from Diana Henry, shaped into walnut sized balls, slightly flattened. Kept things simple by just dredging with flour and pan frying for 3 minutes each side, then finished off in the oven @ 180c for 30 minutes. Would also be good with mushroom risotto. Served with a mixed salad.

    Used this as a guideline to make arancini with leftover mushroom risotto and it tasted really good (no breadcrumbs). Kids still didn't like but that was why we had leftover risotto!
