Pilau rice from Annie Bell's How to Cook: Over 200 Essential Recipes to Feed Yourself, Your Friends & Family (page 221) by Annie Bell

Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Spicy pork fillet

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

If you're new to indian cooking - follow this recipe. I found it very similar to another one I cook so it wasn't that special. However - it's tasty, it's got texture. Leftovers are particularly good. It is not the pilau rice from an indian takeway - do not expect it to be. I would spend a few moments picking out the whole spices before serving and give the usual warning to your fellow eaters. Lovely, but I prefer my anjum recipe with pistachios and sultanas!
