Can substitute buckwheat flour or quinoa flour for rice flour. Errors in the book's original printing -- Missing ingredients: 2 tsp ground ginger, zest of one orange, half a cup of crushed hazelnuts. Procedure: Gently fold the ginger and orange zest in to the batter when adding the remaining ingredients. After decorating the cake with the apricots, sprinkle with the hazelnuts. The online link for this recipe is to the publisher's website where a PDF of the corrected recipe can be downloaded.

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.
