    Pretty good. I substituted spinach for kale. The mash tasted a little watery even though I used whole milk; I did have to add a little cooking liquid to puree the cauliflower. Next time I would just add more milk and possibly a tad more butter (or cheese!) if I'm not counting calories. I'd also reduce the garlic.

    I've made this the last few St. Patrick's day dinners and barely miss the carbs. (I make up for it with irish soda bread.) I use green cabbage and a bit more butter than called for. I also add a cup or 2 of the liquid from the corned beef that's been in the slow cooker all day when cooking the cabbage. This year I steamed the cauliflower in my instant pot- 12 minutes at high with 15 minutes natural release, per Milk Street Fast and Slow. It was fine for this recipe as it's going into the blender, but for other uses I'd cut the time a bit.
