    I subbed eggplant for the mushrooms as I do in many recipes and used an Italian spice mix to jazz these up. They don’t hold together incredibly well, but the flavor is good. 3 stars

    with so many good vegan meatballs on the market now (gardein, beyond, etc) it's not really worth it to make your own unless they're extra special. These were so-so in my opinion. They're mostly rice and breadcrumbs, so it feels starchier than meatier.
