Cheater's homemade broth from The Splendid Table's How to Eat Supper: Recipes, Stories, and Opinions from Public Radio's Award-Winning Food Show (page 48) by Lynne Rossetto Kasper and Sally Swift

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Use this recipe frequently when I have time to amp to up flavor of low-salt canned stock. I throw in a rotisserie chicken carcass from the freezer when available. Favorite stock recipe is still the brodo from The Splendid Table (p. 66-67), but that's a winter project as it cooks on the stove all night in a 20 quart stockpot.
