    Amazing. Cinnamon, garlic, Greek oregano and wine really make this tomato sauce pop. Technically, I didn't follow the recipe exactly, but I used all the ingredients in the amounts required. I had 2 lbs of perfectly ripe cherry tomatoes, so I used them instead of whole tomatoes. Grating 2 lbs of cherry tomatoes was not gonna happen- instead, I put them all in the pot,following the recipe as written and once they were completely liquefied, pureed the sauce with an immersion blender and strained out the seeds and skins. Used a lovely soft goat cheese: Purple Haze, from Cypress Grove. Yummy yummy!
