    Can substitute Creole mustard for Dijon mustard, smoked whitefish or smoked salmon for smoked trout, and soft breadcrumbs for panko breadcrumbs.

    Had some home-smoked catfish sitting in the freezer that needed to be used so I went googling for a smoked fish cake recipe. Wow, wow, wow...these are amazing. They are a little delicate like a crab cake and a few had crumbled edges after flipping them over. I used Creole mustard instead of Dijon and some minced red onion instead of green onions. Will definitely make again when we have more smoked fish.
