A hummus recipe from Veganomicon: The Ultimate Vegan Cookbook (page 67) by Isa Chandra Moskowitz and Terry Hope Romero

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I used blender this time since the notes say it gets a creamier hummus. I’m sure if I wanted that super thin, almost drippable, hummus, I could add more water and a blender would be better for that. But I think the food processed is preferred as it doesn’t need to be stirred as much and gets the hummus just as smooth.

Have made this recipe a lot over the years. Sometimes I cut back on or eliminate the tahini and I usually add more garlic. I also painstakingly peel the chickpeas as it makes for a very creamy hummus. Way better than store bought.

Very good and smooth. I would probably add more garlic and salt next time.
