Mallorcas from Bread Illustrated: A Step-by-Step Guide to Achieving Bakery-Quality Results At Home (page 230) by America's Test Kitchen Editors

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Mine definitely did not turn out that pretty. They took forever to shape into the swirls, having to lengthen the dough and stretch/roll. I think the added butter before forming the swirl made it so that the swirl didn't stick. These ended up super fluffy from the butter and the kneading. It was like eating a lightly sweet crescent roll (it's a compliment even though it doesn't sound like one). I don't know if it'd be worth the extra effort to make them again, but I did enjoy them. Also, they are GINORMOUS! I think you might be better off portioning the dough into 14 or 16 rolls.
