    This is my go-to turkey meatloaf recipe. The added veggies do make it extra healthy, but also serve to make it super flavorful and moist. Before I bought a food processor I used to shred the carrots, celery, and onion by hand on a box grater, which worked fine but was a bit time-consuming, so that's an option if you don't have one. I like to use BBQ sauce as a glaze and sometimes I add some extra herbs and spices to the mix, but it's fine as-is as well. Leftovers freeze beautifully with each individual slice wrapped in foil -- I often double the recipe just to have a stash in the freezer for quick lunches.
