    This was really nice. I adapted the recipe for instant pot. Had half the volume of pork. Rubbed the spice mix over it. I sautéed carrot, onion, celery then placed pork on top and added chicken stock. Cooked on high pressure for 56 minutes. Removed from instant pot, shredded then grilled briefly to crisp slightly. Sautéed onion then cooked rice in chicken stock (ratio 1 to 1) and cooked for 6 minutes, then 10 minutes natural release. Finally stirred in coriander.
