    This was very good. I ended up cooking this in my dutch oven because I don't have a roasting pan. 3 1/2 hours seemed too long to me. I would check this after 2 1/2.

    Make sure to salt the brisket as indicated. This is a family favorite.

    I made 1/2 brisket, which was plenty for 4-5 people. Served with mashed potatoes. I used frozen sliced leeks (and fresh onions), which worked fine. The onion mixture was great - nicely caramelized. Really tasty.
