Everyday cucumbers from Deep Run Roots: Stories and Recipes from My Corner of the South (page 246) by Vivian Howard

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Very simple recipe to highlight cucumbers and tomatoes. Worked well as a side with grilled chicken.

Really simple but tasty all the same.

We really enjoyed this side dish. I have eaten a similar dish my whole life with cucumbers and onions but never would have thought to add tomatoes to the vinegar party. But it worked! (Sun golds, because that’s all that was available tomato-wise this time of year from the CSA.) I had to sub sherry vinegar since I didn’t have apple cider vinegar, and it was good that way too.

No kidding -this was definitely quick and easy, nicely showcasing the vegetables. Sometimes the simplest recipes are exactly what is needed. This time for me it allowed this morning's Farmers Market haul to really shine.

Delicious and easy. It won't replace Shirazi salad for me but a nice acidic complement for richer food.

Daughter and I thought these were too sour so I added a little more sugar and they were still super sour but hubby liked them.
