Can substitute white onions for brown onions, the book's "Livia's meat sugo (Il sugo di Livia) for the book's "Pea salsa (Salsa di pomodoro e piselli) specified in this recipe, and peanut oil or sunflower oil for grapeseed oil. Can bake for fry.
