Bolognese ragù with pappardelle from BBC Food by Mary Berry

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Nice bolognese recipe - everyone agreed that it was very tasty. I subbed chicken stock for beef stock and dry vermouth for white wine. I usually wing it when making bolognese, but my family were very complimentary about this recipe, so maybe I should take that as a subtle hint for the future!!

There has been a lot of controversy in the UK over this recipe which appeared on Mary's new TV show, Mary Berry's Everyday, on Monday night. Food lovers were "shocked and appalled" according to one article. Why? Because she included white wine and double (heavy) cream. So I tried out the recipe, exactly as written. I thought it was great! It has much more depth of flavor than my standard bolognese. I also liked that it cooks in the oven rather than stovetop (no having to keep remembering to stir it so the base doesn't burn).
