    There are many variations of minestrone; 9 in this cookbook. Many contain potato, zucchini and green beans, sometimes cabbage but this does not. I made mine with ingredients on hand and it is most similar to this version. I subbed pasta for the farro and cooked my beans the day prior. I also added tuscan kale. I should have seasoned the broth more, maybe with tomato paste or pesto.
