Spaghetti carbonara (Spaghetti alla carbonara) from The Silver Spoon (page 300) by Phaidon Press Editors and The Silver Spoon Kitchen

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I just couldn't do whole eggs because I have never heard of Carbonara prepared this way. Instead, I used the yolks and 1/4 cream. I also added fresh peas. It was good but next time I'll try as written to see if it improves.

Foolproof and delicious, but also very indulgent - a real treat dinner!

This is my go-to carbonara recipe. It's simple - few ingredients, few steps, fast, and delicious! And it's one of the rare dishes my whole family (including picky kids) enjoys. I usually sub bacon or ham for pancetta. And I use all parmesan instead of pecorino. No cream, however, which is more authentic.

You’d have to be worried if this recipe didn’t work out! Perfect, but that was unlikely to ever be in doubt.
