    No white wine so added a little sherry instead and didn't bother blitzing the carrots I just grated them. 2 slightly coarsely and one very fine and I added a mature Gouda instead of Emmenthal as I had some needing used. Quick and easy and pretty tasty. I must try some of the other risotto recipes in there
