    Very nice. I made this exactly as written, except I used frozen cauliflower and cooked it in an Instant Pot. To the Instant Pot: Added oil and onion. Sautéed for 3 minutes until softened. Added millet, water, garlic, and salt, then stirred. Placed frozen cauliflower on top without stirring. Set to high pressure for 10 minutes. Natural release for 10 minutes. Blended in a Vitamix.

    A lovely side dish if you want mashed cauliflower or don't want potatoes. Loved the nuttiness of the millet.
