    Made these for a dinner party and got rave reviews, especially for the blueberry-thyme compote part. I prepared the parfaits already a day ahead and the crumbly bottom was still perfect. I accidentally used the convection setting of my oven and burned the crumble mix, so I did not bother making it again but rather substituted crushed graham crackers and nobody seemed to mind. The cheesecake layer is very rich but still has a light and airy texture due to whipping cream cheese and mascarpone cheese with heavy cream. Will make again!
