    Made these again. Cooked a bit between 325 and 350 in convection. Pulled all at 14 minutes and they were cooked well after the rest period on the trays. Have really come to appreciate the tender crumb of these cookies and the unique texture from the bleached cake flour.

    Everyone liked this. Baked ~325F in a convection oven. The ones at I pulled at 12-13 minutes had a less dry texture than the ones I pulled at 15 but I had to be a little bit careful because they are really tender and can fall apart really easily if they are too underbaked. I had to put a batch back in because I could not frost them without them falling to pieces
