    I didn't use peanut oil, shock horror - or rather I did use some in the first fry but the oil was too old and frothy, so the second fry was just sunflower oil. Nonetheless, these fries were PERFECT. My previous go-to recipe was Heston's triple cook ones, but these are just as good and less fiddly. I am converted.

    Perfect frites! A bit labor intensive. Perfect served with the steak au poivre.
