Pommes puree from Anthony Bourdain's Les Halles Cookbook: Strategies, Recipes, and Techniques of Classic Bistro Cooking by Anthony Bourdain

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Easy and solid potato puree recipe! I actually don’t really like mashed potatoes but still had some. My husband loved it. I used 10 instead of 6 potatoes because mine were quite small. It is quite a lot of cream and butter - but that’s what makes them taste really good. Will do again this way! Used leftovers for Amish dinner roll dough which came out perfect!

Not exactly light but absolutely delicious.
