    Can substitute buttermilk for powdered milk.

    I used buttermilk instead of powdered milk, and because I didn't have the orange extract (recipe from the book), I doubled the amount of zest and added a bit more juice (about 5T instead of 4T). I used oranges fresh from my tree and I freshly ground the cardamom seeds in a molcajete. The dough was so wet there was no way I would be able to roll it out, let alone shape it or cut it. I ended up scooping globs of dough with my hands onto parchment paper-covered sheet pans. It turned out all right regardless. The flavor was excellent and the texture was fine (though not exactly how a scone is supposed to be). I will make them again despite the weirdly wet dough.
