Pear-radicchio risotto with red grapes from The Washington Post by Matt Finarelli

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Recipe without paywall can be found here : https://www.syracuse.com/recipeswap/2012/03/recipe_swap_try_a_healthier_du.html I halved the recipe which yielded exactly 2.5 servings. This is a nice and original autumnal risotto. I used green grapes, red wine, chicory and red onion but I don't think it changed the recipe much - I did add the grapes and chicory to the pan, because I needed to use them up as they were holding in there after my holidays, thought it was safest. The walnut microwave trick is nice! But beware because he advises two times two minutes, then one minute on high, and a couple of my walnut burnt after just the first two minutes (but the rest was fine). Just enough cheese to be a little decadent, but enough healthy stuff to feel good too! Will definitely attempt to make again.
