    This was surpisingly delicious given the simplicity of ingredients and method. Next time I would reduce my oven temp as it was cooked outside and soft inside although that might be because of the high amount of eggplant. Will definitely make it again. This was much nicer straight out of the oven, not tge greatest cold dish.
