Carbonara [Da Enzo al 29] from I Heart Rome / The Eternal City: Recipes & Stories from the Eternal City (page 23) by Maria Pasquale

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This recipe is absolutely mind-blowing. We visited Italy a couple of months ago and my sons became huge carbonara fans. My five year old loved it so much that he ate it once a day, every day, for three weeks. He has been asking me to recreate that experience since we got home so I've been working through the recipes in my collection and many were passable but none were even close to what we ate in Italy. Then I tried this recipe and it is THE ONE. It was just as good as the carbonara at the best restaurants we visited in Italy and better than the carbonara we had at most restaurants. Absolutely worth the price of this book.
