    Delicious and easy in a 12 inch cast iron skillet. I added some (non Paleo) shredded cheese, and might also add some non Paleo black beans.

    I forgot the cilantro garnish. Tasty and healthy! Probably could use ground chicken or turkey in place of the beef. Make sure to use as large of an oven safe skillet as possible since basically all the ingredients are dumped and sautéed in the pan.
