    Can substitute vegetable bouillon for vegan chicken bouillon, and vegan Monterey Jack cheese for vegan cheddar cheese.

    Solid tortilla soup. I used an immersion blender. This didn't have the depth of flavor I was hoping for, but the charred onions and tomatoes gave it a nice smokiness. Incorporating chilies would have gone a long way.
