Spinach & artichoke mac & cheese from Southern Girl Meets Vegetarian Boy: Down Home Classics for Vegetarians (and the Meat Eaters Who Love Them) (page 127) by Damaris Phillips

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This tasty dish is very rich in an artery-clogging kind of way! Probably best eaten as a side & not as a main dish. It's not overly saucy, but uses cream cheese, mayo, almond milk & Parmesan to simulate the taste of the ubiquitous spinach-artichoke dip. I only used 1/2 lb. of pasta rather than the full lb. called for, plus less cream cheese, mayo, garlic & onion powder, but used full amt. of veg & liquids. The only real change was throwing in some fancy runny cheese to make up for having only a small amount of cream cheese on hand; this added a bit of a strange taste, so I think it's preferable to stick with cream cheese!
