Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    This is a fabulous recipe! I've made it many times, and it's tasty, (fairly) healthy, and filling. It works really well as a make-ahead lunch, mixing everything but the arugula together, then adding the arugula at lunchtime. The quality of the giardiniera pickles makes a big difference; I like it with Trader Joe's giardiniera.
