    This was pretty good! I made it ahead for weekday lunches, and it was quite nice. I used oat groats and cotija cheese since I was out of barley and feta, and it was good with those substitutions (though I think it would be better with feta). It seems like a good formula that I'll play around with (whole grain + dried sausage + pickles + crunchy veggies + cheese), and maybe eat over a bed of arugula or spinach next time.
