    This is IT. The weeknight recipe I've been looking for. Super fast, super easy, vegetarian, filling - awesome all around. It seriously took about 10 minutes to make, if that. I kept the yolks runny, which made the bean salsa extra delicious. We'll be eating this really often, I think.
