Banh mi rice bowls with spicy pork and Sriracha mayo from Healthyish: A Cookbook with Seriously Satisfying, Truly Simple, Good-for-You (But Not Too Good-for-You) Recipes for Real Life (page 170) by Lindsay Maitland Hunt

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Ahhhhhhh this was so good and so easy. I am a huge lover of ground meat rice bowls. Cook up some ground meat, throw some seasoning on, dump on top of rice. Somehow I'd never tried a banh mi version, but holy moly did this end up being both super simple and super good. I was wary of all the fish sauce, which smelled a little intimidating, but the mix of pickly vegetables, umami-y meat, and spicy mayo was really, really good.
