    Can substitute mild paprika for Kashmiri chile powder, and malt vinegar for coconut vinegar.

    It's a fiddle, with a paste and a powdered masala marinade, then dry frying the beef (I was worried for my stainless steel pan, but it ended up cleaning up OK), then frying the other ingredients and adding back the beef, but the flavour was absolutely wonderful.
