Earl Grey madeleines (Madeleines au thé Earl Grey) from Tasting Paris: 100 Recipes to Eat Like a Local (page 118) by Clotilde Dusoulier

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Requires refrigeration at least overnight. Can substitute citrus fruit of your choice for oranges.

This worked out better than Doris Greenspan’s recipe, as the tea leaves were incorporated into the batter rather than just steeping them in the butter and straining them out. I scaled the recipe down to a third and that even worked, got a nice bump on them. It only took 12 minutes to bake in my very dark non-stick pan. Did not make the orange glaze.
