Poached chicken breasts from Magnolia Table, Volume 1: A Collection of Recipes for Gathering (page 85) by Joanna Gaines and Marah Stets

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

It’s poached chicken — not much to shout about. But the recipe works, and my chicken was done in eight minutes. Good for soup, chicken salad, sandwich base, etc.

This method for moist & flavorful poached chicken breasts to use in some upcoming meals worked well. Use the thermometer to ensure they are actually at 165 - she gives an approximate time & mine took maybe 2 more minutes. It is written for 5 boneless skinless breasts but it is easy to scale / down depending on your needs.
