Meat loaf from Magnolia Table, Volume 1: A Collection of Recipes for Gathering (page 259) by Joanna Gaines and Marah Stets

Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Becki's mac and cheese

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Used ketchup instead of tomato sauce and only 1 lb of ground beef. Still got a great result! Parchment paper on a baking sheet made for easy clean up.

Used ketchup instead of tom sauce. Used 1lb beef and 1/2lb pork. Omitted the cheese. Perfect ??

I used the higher amount of onion called for as we like it in meatloaf and mixed cracker crumbs (ends of different boxes kept in a jar), having googled that 1 sleeve of saltines should yield 1.5 cups of crumbs. The only real change is that I know that we are not fans of "just ketchup" on top so I made a mix of ketchup, Heinz chili sauce, a little yellow mustard and some hot sauce. I cut this recipe in 1/2 and made 3 smaller "mini loaves" that were done somewhere between 30 and 40 minutes (using internal temp as the guide). I don't often stray from my gold standard meatloaf but we both enjoyed this one.

I included 1/2 cup cooked onion since my family likes that in meat loaf. Ritz crackers made a good substitute for saltines. This is a pretty standard meat loaf except for the addition of shredded cheddar, which honestly we could not detect, other than from the orange fat in the bottom of the pan. My family loves meat loaf and this version was tasty. It took 10 minutes longer to cook through.
