White chocolate rice pudding from Rasika: Flavors of India (page 283) by Ashok Bajaj and Vikram Sunderam and David Hagedorn

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Made this for a Sri Lankan themed dinner party at Donna's house. The rice was nicely sweetened before adding the white chocolate. Then the white chocolate takes it from an ordinary Indian rice pudding to one that hints at something more indulgent. The saffron imparts a lovely hue. I doubled the rice and kept everything else as set out in the recipe. Also added a dash of vanilla. Keep these two changes going forward, it made 8 small servings.
