    This recipe takes 24 hours to cook! As she is basing this recipe on the Slow-roasted shoulder of pork (Spalla di maiale arrostita lentamente) from River Cafe Cookbook Two by Rose Gray and Ruth Rogers which they cook over night in their wood oven.
