Korean BBQ salmon bowls with quick-pickled cucumbers and gochujang sauce from Eats Well with Others by Joanne Bruno

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

To me, the flavor was not reminiscent of Korean BBQ in any way, but I can overlook that. The recipe turned out fine after I made some tweaks, but I wouldn't make it as written. For us there was not enough rice or veg; I increased the rice and added some cooked broccoli florets to the salad. The salad was too bland and acidic; I added a bit of soy sauce to the dressing. Likewise, the cucumbers probably could have used a bit of salt, although I left them as is. Fortunately, the salmon was very tasty, although the sauce burns easily due to the sugar, so be careful with the heat. There was way more gochujang than needed, and I would have liked that incorporated with the salmon sauce rather than separate.

A quick, light bowl of goodness that hit the spot on a sultry evening. Next time make only 3/4 of the gochujang sauce--that should be plenty!
