Beetroot, caraway and goat's cheese bread from Ottolenghi Simple (page 16) by Yotam Ottolenghi

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Delicious. Two slices down and I want more. Was definitely not ‘simple’ to make - think I used 4 bowls and at least 3 other utensils. Then split cooking time! But it was worth it if you have some spare time on a cold day. I didn’t have sour cream, so used greek yoghurt and it was fine. Also subbed half the pumpkin seeds for pine nuts, as I didn’t have enough. Great sub, I think it probably improved it! Would’ve been 5 stars, but one less for the faff and dishes. Will make again.

This is amazing recipe for a healthy and hearty bread. It was surprisingly moist for the long baking time. I was nervous. The outside was crispy while the inside is like cake. The list of ingredients is long, but it isn’t terribly hard to make. With exception to the beet, I had every ingredient on hand.

This bread turned up delicious. It is a simple recipe where there is no need to knead the ingredients. It is more like a cake recipe. It is simple to prepare and you can eat it alone without any toppings or you can add anything you like. You are going to make it more than once when you try it. P.S.I have made it several times and we really like it. I serve some slices with some roast veggies on top and also with an anchovy. Yum!

MIxed reviews on that one, lot‘s of flavors and textures going on. While the kids did not like it, the adults actually raved about it.

Lots of flavors and textures in this bread. No problem with the texture as some of the other commenters had. I did use a lot less thyme since I thought the amount called for would be overpowering.

It was okay, nothing special. Mine was too crumbly to slice, not sure if I should have cooked it for longer or if my mix had been too wet. I think it could’ve used a stronger goats cheese (I used Waitrose soft British one). Agree with the previous reviewer that it would work well with soup. We both decided it tasted ‘healthy’ so if that’s your thing, you’ll enjoy this.

The textures were great, and milder than I thought it would be. And so easy to make. Great for breakfast.

This was really nice and would be great with soup. I mistakenly bought precooked beetroot not in vinegar not fresh so Used this even though recipe explicitly said not to, just reducing quantity a little as it is was wet and still turned out well

This was every bit as good as I had thought it would be. (Although I couldn't get nigella seeds and replaced that with some ground cumin and had to use ground caraway instead of seeds.) The flavours are very complex together and texturally its very pleasing with the cheese, beetroot and pumpkin seeds. A winning recipe.
