    This went down really well with all the family. I did nachos on the side to make a meal of it but the fishcakes were more filling than I thought they’d be. Didn’t have an egg so used a bit of mayo and some panko breadcrumbs to get the texture right. Would make again

    Much simpler (as advertised) than the slaw and I'm glad I used two recipes from two cookbooks to compare/contrast. I used 1.23LB flounder instead of 1 LB called for and a little less cilantro, still came out with 12 patties. 3 minutes pan fried each side was perfect. Served without tortillas (my preference), with yogurt and mango pickle which were both delicious. But it was not filling enough-both mom and I went back for snack later in the evening! Next time bigger patties, serve with a carb or maybe think of this as a small meal.

    I thought the mixture looked a bit wet, perhaps the fish I used, so I added a handful of panko breadcrumbs and turned out perfectly.

    Used lemon as I didn't have any limes and also served with lettuce. Nice enough for a summer meal and I would make it again because it was so quick and easy.

    Used tilapia for the fish. Turned out well. Would make again.
