Parmesan smashed potatoes from The Barefoot Contessa Cookbook (page 158) by Ina Garten

Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Turkey meatloaf

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I thought these were...fine. I did like the parmesan, I also added LOTS of pepper but I will never be pulling out my kitchen aid mixer for smashed potatoes again that's for sure. T quite liked them but I think I make lots of better versions of smashed/mashed potatoes with less dairy than called for here. A rare BFC miss for me.

Yes these are rich but they are DELICIOUS! I think my taste buds have changed because I definitely felt like it needed more pepper or even an onion-y bite. If you like these - you would likely love Alison Roman's Crushed Sour Cream Potatoes: https://cooking.nytimes.com/recipes/1020602-crushed-sour-cream-potatoes

I thought these were good, not great. My husband thought they were too rich and wasn't a fan though.

Good even when made with lower fat milk instead of half-and-half. I usually mix them by hand. Add salt to taste - I did not need the full amount.
