Sausage apple pancakes with apple cider syrup from Closet Cooking by Kevin Lynch

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute brown sugar or sugar for honey, and brown sugar for maple syrup.

I made them again, this time using "boudin antillais" (spicy blood sausage from the French Antilles) - which is why they have this brown color, because the blood sausage completely merged into the batter. This was a great idea nonetheless, because you could still taste the boudin noir and the spices, and it married the apple very well. I halved the recipe to match the amont of meat i had and this yielded very exactly four pancakes, so to keep in mind that the four servings indicated are for not very hungry people :) Sorry for the horrendous picture ahahah

That was nice! I made with merguez sausage - but was not very spicy, i might try with a spicier version. I used just maple syrup rather than making the apple cider syrup (for time). I liked it anyway :)
