    Not wanting a lot of leftover yolks, I calculated the volume of egg needed (1/2 recipe = 180 mL) & used 2 XL eggs, 1 L egg + 1 XL egg white, calling it close enough. A jalapeno freezer raid resulted in a combo of diced, roasted + roasted jala pesto. For the top, I seeded/sliced a large serrano. End result was a really good "eggs for dinner" dish that we ate with a homemade chipotle/tomato relish & I will make this again.

    Made this for dinner last night and it was so good! Pretty easy to make and would definitely make again.
